2 lb. firm-ripe pears, peeled, cored, and cut into 1/2-inch cubes (5 cups)
1 cup finely diced yellow onion
1/4 cup dried cranberries
1/4 cup chopped crystallized ginger
1 tsp. mustard seeds
1 tsp. grated fresh ginger
Kosher salt
