4 medium scallions, cut into 1-inch pieces (including 4 inches of the green)
1 medium red bell pepper, coarsely chopped into 1-inch pieces
5 oz. mushrooms, thinly sliced
4 Tbs. peanut or canola oil
2/3 cup low-salt chicken broth or water
2 tsp. cornstarch
Salt and freshly ground black pepper to taste
1/4 cup chopped fresh cilantro (optional)
