Quick Clam Chowder with Bacon, Tomatoes and Bell Peppers

Ingredients

2 oz. bacon (1 to 3 slices depending on thickness), cut into 1/2-inch pieces
1 medium onion, diced
1/2 large red bell pepper, diced
3 Tbs. all-purpose flour
4 cans (6-1/2 oz. each) minced clams, clams and juice separated (about 1-1/2 cups minced clams and 2-1/4 cups juice)
1 bottle (8 oz.) clam juice
1 can (14-1/2 oz.) diced tomatoes, with their liquid
3/4 lb. boiling potatoes (about 3 small potatoes), cut into medium dice
1/4 tsp. dried thyme
2 Tbs. minced fresh flat-leaf parsley
Coarse salt and freshly ground black pepper
