3 Bean Chili Con Carne Recipe

Ingredients

  • 2 pounds beef, cut into 1/4 inch cubes or coarsely ground
  • 1 1/2 cups bell pepper, use a variety for added color
  • 2 jalapenos, or to taste
  • 1 large onion (about 1 1/2 cups) diced
  • 2 cloves (about 1 teaspoon) minced garlic
  • 1 cup beef broth, or water, or as needed
  • 1 (15-ounce) can tomatoes with their juice, coarsely chopped
  • 1/4 to 1/2 cup good quality chili powder (how hot is up to you)
  • 1 teaspoon salt (or to taste)
  • 1/2 teaspoon freshly ground black pepper (or to taste)
  • 1 1/2 teaspoons dried oregano (or to taste)
  • 1 1/2 teaspoons cumin powder (or to taste)
  • 1 - 2 (15-ounce) cans pinto beans in chili sauce, undrained
  • 1 (15-ounce) can black beans, drained
  • 1 (15-ounce) can red kidney beans, drained
  • Masa mixed with water, as a thickener, if desired
  • Additional Toppings:
  • Freshly grated cheddar or jack cheese, or both
  • Chopped onions (red or green are nice)
  • Crushed tortilla chips
