Polenta-Crusted Brazilian Grilled Vegetable Casserole with Scotch Bonnet Pepper Sauce

Ingredients

  • 4 cups Vegetables consisting of any or all of the following: yellow squash, red pepper, orange pepper, green pepper, zucchini, red onion, cauliflower, broccoli, red cabbage, and mushrooms
  • 2 tablespoons Olive Oil
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Pepper
  • 1 teaspoon Chile Powder
  • 1/2 teaspoon Cumin
  • 1 teaspoon Thyme
  • 1/4 teaspoon Cayenne Pepper
  • 1/4 cupCilantro chopped
  • 2 clovesPeeled Garlic minced
  • 1Organic Polenta
  • Goat Cheese crumbled (optional)

For the Sauce

  • 1 Scotch Bonnet pepper
  • 2 cloves Peeled Garlic chopped
  • 1 tablespoon Chipotle Chiles chopped finely
  • 1 cup Plum tomatoes chopped
  • 2 tablespoons Tomato Paste
  • 1/4 cup Spanish Onions chopped
  • 1/4 cup Organic Bell Pepper (use Green Bell Pepper) chopped
  • Salt and Pepper to taste
