- 2 tablespoons Olive Oil
- 1/2 teaspoon Salt
- 1/2 teaspoon Pepper
- 1 teaspoon Chile Powder
- 1/2 teaspoon Cumin
- 1 teaspoon Thyme
- 1/4 teaspoon Cayenne Pepper
- 1/4 cupCilantro chopped
- 2 clovesPeeled Garlic minced
- 1Organic Polenta
- Goat Cheese crumbled (optional)
For the Sauce
- 1 Scotch Bonnet pepper
- 2 cloves Peeled Garlic chopped
- 1 tablespoon Chipotle Chiles chopped finely
- 1 cup Plum tomatoes chopped
- 2 tablespoons Tomato Paste
- 1/4 cup Spanish Onions chopped
- 1/4 cup Organic Bell Pepper (use Green Bell Pepper) chopped
- Salt and Pepper to taste
