Rice Pudding With Warm Cranberry Sauce

Ingredients

  • 1 1/2 cups water
  • 1/2 t salt
  • 3/4 cup short or medium grain rice
  • 2 beaten eggs
  • 2 cups whipping cream, half-and-half or light cream
  • 1 1/2 cups milk
  • 2/3 cup sugar
  • 1 T butter, melted
  • 1/2 t ground cardamom or cinnamon
  • 1 whole almond, shelled
  • Cranberry Sauce~
  • 1 cup canned cranberry jellied sauce
  • In a medium microwave safe bowl, stir jellied cranberry sauce. Microwave on high for 60 seconds, stir until smooth. Microwave an additional 60 seconds, if necessary, stirring until smooth.
