Choose-a-cheese Souffle

  • 2 teaspoons snipped fresh thyme or 1/2 teaspoon dried thyme, crushed
  • 1/4 cup butter or margarine
  • 1/4 cup all-purpose flour
  • 1/8 teaspoon ground red pepper
  • 1 cup milk
  • 1 tablespoon margarine or butter
  • 2 medium firm, ripe pears, cored and thinly sliced
  • 2 large shallots, very thinly sliced (1/4 cup)
  • 1 tablespoon cider vinegar
  • 1/2 teaspoon honey
  • dash salt
