1 tsp pure Vanilla extract
1/2 tsp baking soda
1 tbsp cider vinegar

1 cup icing sugar, sifted
500 g Mascarpone cheese
1 cup sweetened whipping cream
1/2 tsp pure vanilla extract
Filling:
340 g raspberry jam
250 g frozen raspberries, drained - or fresh
