Chunky Chipotle Pork Chili

Ingredients

  • 1 tablespoon cooking oil
  • 1 small onion, chopped
  • 2 teaspoons bottled minced garlic (4 cloves)
  • 12 ounces pork tenderloin, cut into 3/4-inch cubes
  • 2 teaspoons chili powder
  • 2 teaspoons ground cumin
  • 1 yellow or red sweet pepper, cut into 1/2-inch pieces
  • 1 cup beer or beef broth
  • 1/2 cup bottled picante sauce or salsa
  • 1 - 2 tablespoons finely chopped canned chipotle chile peppers in adobo sauce*
  • 1 15 ounce can small red beans or pinto beans, rinsed and drained
  • 1/2 cup dairy sour cream
  • Fresh cilantro or flat-leaf parsley sprigs (optional)
