Chunky Chipotle Pork Chili
Ingredients
- 1 tablespoon cooking oil
- 1 small onion, chopped
- 2 teaspoons bottled minced garlic (4 cloves)
- 12 ounces pork tenderloin, cut into 3/4-inch cubes
- 2 teaspoons chili powder
- 2 teaspoons ground cumin
- 1 yellow or red sweet pepper, cut into 1/2-inch pieces
- 1 cup beer or beef broth
- 1/2 cup bottled picante sauce or salsa
- 1 - 2 tablespoons finely chopped canned chipotle chile peppers in adobo sauce*
- 1 15 ounce can small red beans or pinto beans, rinsed and drained
- 1/2 cup dairy sour cream
- Fresh cilantro or flat-leaf parsley sprigs (optional)
