  • 2 tablespoons quick-cooking tapioca
  • 2 teaspoons curry powder
  • 1 teaspoon grated fresh ginger
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cardamom
  • 1 12.3 ounce package extra-firm tofu, drained and cut into 3/4-inch cubes
  • 1 medium zucchini, halved lengthwise and cut into 1/2-inch slices
  • 1 cup frozen peas
  • 1/3 cup golden raisins
  • 1 cup uncooked regular brown rice
