  • 1 1/2 pounds Bosc pears, cored and cut into 2-inch pieces
  • 1 1/2 pounds Bartlett pears, cored and cut into 1-inch pieces
  • 3 tablespoons granulated sugar
  • 2 tablespoons cider vinegar
  • 1 1-inch piece fresh ginger
  • 1/2 of a vanilla bean, split lengthwise
