2 broiler fryer chickens (2 1/2 to 3 pounds each), cut up

2 cups orange juice
1/4 cup dry sherry or apple juice
1 tablespoon brown sugar
2 teaspoons salt
Topping
1 large onion, thinly sliced
1/2 cup chopped green pepper
1 can (6 ounces) sliced mushrooms, drained
