1/4 cup dry sherry
2 tablespoons reduced-sodium soy sauce
2 tablespoons water
1 teaspoon firmly packed brown sugar
Vegetable cooking spray
1 tablespoon vegetable oil
1 clove garlic, minced
1 cup broccoli flowerets
1 medium onion, thinly sliced
2 medium carrots, scraped and cut diagonally into 1/2 inch slices
1 cup sliced fresh mushrooms
1 medium-size sweet red pepper, seeded and cut into 1/4 -inch strips
2 teaspoons cornstarch
2 cups hot cooked brown rice, (cooked without salt or fat)
