Salmon Mousse
2 tbsp (30 mL) fresh lemon juice
Grated rind of half a lemon
2 French shallots or 4 green onions
1/2 cup (125 mL) boiling water or white wine or Sake
1/2 cup (125 mL) mayonnaise
1 tsp (5 mL) tarragon or
1 tbsp (15 mL) fresh minced dill
2 cups (500 mL) cooked, fresh salmon or
1 15.5 oz (439 mL) can pink or red salmon, with juice
1 cup (250 mL) whipping cream Salt and pepper to taste
