1 cup uncooked couscous
One 8-ounce can garbanzo beans rinded and drained
1 teaspoon chopped garlic (about 1 clove)
1/2 cup finely chopped yellow onion
2/3 cup peeled, roughly chopped yellow bell pepper
1/2 cup trimmed and chopped celery (about 1 stalk)
1/2 cup peeled, finely chopped carrot (about 1 small carrot)
1/4 cup water
2 tablespoons sherry
1/4 teaspoon freshly ground black pepper
1/4 teaspoon ground allspice
1/8 teaspoon ground mace
1/2 teaspoon salt
