Ingredients

  • 1 1/2 cups shredded Monterey Jack cheese
  • 1 1/2 cups shredded cheddar cheese
  • 3 oz cream cheese, softened
  • 1 cup enchilada sauce (recipe below)
  • 1 medium bell pepper, chopped
  • 1/2 cup green onions, chopped
  • 1 tsp cumin
  • 1/2 tsp cayenne pepper (or to taste)
  • 8 flour tortillas
  • 1 1/2 cups shredded lettuce
  • 1 tomato, chopped
  • Enchilada sauce:
  • 2 cups tomato sauce
  • 3 cups water
  • 6 cloves garlic, minced
  • 1/2 large onion, finely chopped
  • 3 tsp (1 Tbsp.) chili powder
  • 4 tbsp (1/4 cup) cornstarch
