  • 1 jalapeno chile, seeded and finely chopped (optional)
  • 2 tablespoons sour cream, plus more for serving if desired
  • 1 1/2 cups (about 6 ounces) coarsely grated Monterey Jack or cheddar cheese
  • 1/2 cup finely chopped green onions
  • 8 flour tortillas (7 to 8-inches in diameter)
