Ingredients

  • 4 cups water
  • 1 cup shelled fresh peas or frozen peas
  • 1 cup carrots, diced
  • 1-inch cinnamon stick
  • 1 tsp cardamom powder
  • 1/2 tsp turmeric powder
  • 1-inch-long fresh ginger, thinly sliced
  • 2 tbsp vegetable oil; preferably canola, sesame, sunflower, or soybean oil
  • 1 tsp mustard seeds
  • 1 pinch asafetida (found in Indian markets)
  • 3 green chilies, thinly sliced, optional
  • 2 garlic cloves, minced
  • 1 cup thinly sliced onion
  • 3 fresh lemons
  • 1 cup cilantro
  • 1 cup dry-roasted cashew nuts or walnuts
  • Salt to taste
