Ingredients

  • 1 clove garlic, minced
  • 1 teaspoon salt (or to taste)
  • 1 cup long grain rice
  • 1 bell pepper (red, yellow or green), cut into small pieces
  • 1 tomato, cut into small pieces
  • 1 can (15 oz.) beans (cannellini, kidney or black), drained
  • Herbs and spices to flavor (parsley, oregano, black pepper, Tabasco)
