- 2 14 3/4 oz cans wild Alaskan sockeye red salmon, drained and skin removed
- 1 1/4 cup breadcrumbs
- 3/4 cup Parmesan cheese, grated
- Red Pepper sauce:
- 1 tbsp olive oil
- 2 red peppers, chopped
- 1/2 cup fresh basil leaves, washed and patted dry squeezed juice (3/4 to a whole lemon)
- 3/4 cup mayonnaise
- salt and pepper to taste
