Cream Cheese Crepes with Apricot Sauce

Ingredients

  • Crepes:
  • 3 eggs
  • 1 cup milk
  • 6 T flour
  • 3/8 t. salt
  • 1/2 stick butter
  • 8 oz. cream cheese
  • 1/2 stick softened butter
  • 1/4 cup sugar
  • 1 1/2 t. vanilla
  • 1 t. grated lemon rind
  • 2/3 cup tart apricot jam
  • 1/3 cup orange juice
  • 2 T butter
  • 1 T lemon juice
  • 1 1/2 t. grated lemon peel
  • 6 T slivered almonds

Description

These Crepes Are Stuffed With A Lemony Cream Cheese Filling And Topped With An Apricot And Orange Sauce. Make The Crepes Ahead And Store Them, With Waxed Paper In Between, In An Airtight Container In The Refrigerator Or Freezer.
