- 1 pkg (8 oz) shredded mozzarella cheese, divided
- 1/4 cup 100% grated parmesan cheese
- 2 Tablespoons of Castella crushed red pepper
- Super Jerk Rub:
- 1 1/2 cup onion, finely chopped
- 4 to 6 cloves of garlic, finely chopped
- 1 Tablespoon fresh thyme leaves (or 2 Tablespoons dried leaves)
- 2 teaspoons salt
- 2 teaspoons ground black pepper
- 1 Tablespoon ground pimiento (allspice)
- 1/2 teaspoon ground nutmeg
- 1 teaspoon ground cinnamon
- 1/4 cup Grace browning sauce
- 2 Tablespoons Blue Mountain burnt sugar
- 2 Tablespoons of Blue Mountain Jamaican meat seasoning
- 1/4 cup of Angostura teriyaki sauce
- 1/4 cup of Walkerswood traditional Jamaican jerk seasoning (hot & spicy or milder varieties)
- 2 Tablespoons of Walkerswood Hot Jamaican Scotch Bonnet pepper sauce
- 1 very hot pepper, chopped (optional)
