  • Salt and pepper to taste
  • 2 tbsp canola oil
  • 1 tbsp butter or ghee (clarified butter)
  • 1 medium yellow onion, chopped
  • 1 medium tomato, chopped
  • 1 tbsp tomato paste
  • 2 tsp garlic
  • 2 tbsp curry powder
  • 1/4 tsp cinnamon
  • 1 cinnamon stick
  • 1 tsp salt and pepper
  • 1 14 oz can chicken broth, heated
  • 6 oz apple juice, heated
  • 8 oz unsweetened coconut milk
  • 1 cup shredded provolone or smoked mozzarella cheese
  • 1/2 cup flat leaf parsley, chopped
  • 1 lemon, quartered
  • 2 cups cooked brown rice
