Tuscan Boned Chicken with Orzo Pilaf

Ingredients

  • 1 whole boned chicken
  • 1/2 cup onion, minced
  • 3 cloves garlic, minced
  • 5 tbsp olive oil
  • 1 10 oz package frozen chopped spinach, thawed and squeezed out
  • 1/2 cup feta
  • 1/2 cup provalone or mozzarella cheese
  • 1 large egg
  • 1 cup Sauvignon Blanc or other dry white drinking wine, divided
  • 2 slices white bread, crust removed and cut into cubes
  • 2/3 cup finely diced sundried tomatoes packed in olive oil
  • 1/2 cup Parmesan cheese plus 1/4 cup grated
  • 1 tsp pepper
  • 1 tsp plus 3 tbsp salt
  • 1 lb orzo pasta cooked per package instructions
  • 3/4 cup pasta cooking water
  • 1 cup frozen peas
  • Zest from one lemon
  • 1/2 cup half and half
  • 2 tbsp unsalted butter
  • 1/4 cup minced flat leaf parsley
  • 1 lemon quartered
