SunDried Tomato and Cottage Cheese Muffins

Ingredients

  • 2 cup all-purpose flour
  • 1 1/4 cup whole milk
  • 1 cup cottage cheese, crumbled or shredded
  • 1/2 cup mozzarella and Parmesan, shredded (optional)
  • 1 1/2 cup sun-dried tomatoes, oiled ones, finely chopped
  • 1/2 cup spring onions, chopped, white and greens separate
  • 8-10 cloves of garlic, minced
  • 2 tbsp olive oil
  • 2 eggs beaten
  • 2 tsp baking powder
  • 1 tsp baking soda Salt and black pepper, to taste
  • 4 tbsp basil flakes, to taste
  • 2 tbsp crushed red pepper flakes
