- 2 yellow squashed, washed

- 1/4 cup chopped prosciutto or country ham
- 1/4 cup chopped onion
- 1/4 cup chopped green bell pepper
- 1 clove garlic, minced
- 1/2 Roma tomato, diced
- 1/2 cup breadcrumbs made from 1 slice of good white bread
- 2 tablespoon chopped fresh parsley
- 2 tablespoons chopped fresh basil or 1 teaspoon dried
- 1/4 cup grated Parmesan or Asiago cheese
- 1 egg, beaten
- Salt, if desired
- Freshly ground black pepper to taste
