    1/2 large yellow onion, minced
    1 small carrot, minced or shredded
    1/3 medium bell pepper (green or red), minced
    1/2 cup finely chopped fresh mushrooms

    1/4 cup finely chopped parsley
    1/4 cup whole grain bread crumbs
    1/4 cup finely chopped walnuts
    1 tsp dried basil
    1 egg white
    1 tsp dark sesame oil
    1 tsp spicy Dijon mustard
    1 TBS low-sodium soy or tamari sauce
    Black pepper, Mrs. Dash, crushed garlic, sesame seeds, other seasonings to taste (all optional, not included in nutrition analysis)
    Non-stick cooking spray
