Couscous With Dried Cherries And Almonds


    2 Tbsp. unsalted butter
    1 cup whole-wheat couscous
    3/4 cup water
    1/2 cup low-sodium chicken broth
    1/2 tsp. salt
    Ground black pepper
    1 tsp. ground garam masala
    1/8 tsp. cayenne
    2 cloves garlic, minced
    1/4 cup chopped dried cherries
    1/4 cup chopped toasted almonds
    2 small scallions, chopped
    1-2 Tbsp. fresh lemon juice


Another Based On A Cook's Illustrated Recipe, But Tweaked For Size And On-hand Ingredients. (I Made This To Serve Only 4 And Swapped In Almonds For Their Pecans.)
