Ingredients

    2 teaspoons extra-virgin olive oil or canola oil, divided
    3/4 cups chopped onion (1/2 large or 1 medium)
    1/2 + 3/8 cups quick-cooking or pearl barley
    1/2 clove garlic, minced
    1/2 teaspoon dried thyme leaves
    1 1/2 - 2 cups reduced-sodium chicken broth or vegetable broth
    6 ounces assorted mushrooms (cremini, shiitake and/or button), wiped clean, trimmed and sliced (2 cups)
    3/4 cups diced red bell pepper (1/2 large or 1 medium)
    1/8 teaspoon salt
    Freshly ground pepper to taste
    2 cups spinach leaves, thinly sliced
    1/2 tablespoon balsamic vinegar, or to taste
