Chocolate-raspberry Mocha Cake

Ingredients

    Raspberry Filling:
    600g bag frozen unsweetened raspberries, thawed
    1/2 cup Splenda
    1 t lemon juice
    2 T cornstarch

    Optional but highly recommended (Not included in nutrition info)
    2 T raspberry liqueur [I use raspberry Sour Puss]


    Cake:
    1 1/2 cups plus 1 1/2 T all-purpose flour
    3/4 cup cocoa
    2 t baking soda
    1 t baking powder
    1/2 t salt
    2 eggs
    2 cups Splenda
    1/2 cup vegetable oil
    1 cup buttermilk [I use 1 cup milk + 1 t lemon juice]
    1 cup brewed coffee, at room temperature
    1 t vanilla extract

    Icing:
    1/2 cup unsalted butter, softened to room temperature
    1 pound powder sugar
    3 - 4 T water
    1 1/2 T brewed coffee, room temperature
    2 t cocoa powder
