5-6 hot spicy Green Chillies chopped fine

4-5tsps.Coriander-Cumin powder

Preferred Oil for deep frying.

200gms.Potatoes sliced horizontally to 0.25"thickness
200gms.Shallots(Red Onions) sliced like the Potatoes 0.25" thick
200gms.Egg Plant(Brinjal/Vaangey/Baingan)sliced to 0.25"thick slices
400gms.Cauliflower(Flower/Gobhi) broken into florets
2cups.Chick-Pea Flour(Besan)
1.5tsp.Turmeric Powder
3-4tsps.Red Chilli Powder
2-3tsps,Coriander-Cumin Powder
5tsps.Carom(Oavaa/Ajma/Ajwain)Seeds
Salt to taste

15-20 whole Large Green Chillies
200gms.Potatoes boiled and mashed well

1.5tsps.Dry Mango Powder(Aamchur)

3tsps.Coriander--Cumin Powder

1cup Chick-Pea Flour

1bunch fresh Mint Leaves
2-3 fresh Green Chillies
1Shallot sliced
