Bhajiyas Or Pakoras(fritters)

Ingredients

    SERVES 6-7 PEOPLE EACH
    KAANDA(SHALLOT)BHAJIYAS
    OR KOBI(CABBAGE) BHAJIYAS
    500gms.Shallots(Red Onions)sliced fine lengthwise
    OR
    500gms.Cabbage(Kobi/Patta Gobhi)sliced in thin strips or shredded fine
    1.5cups.ChickPea Flour(Besan)
    1.5tsp.Turmeric Powder
    5-6 hot spicy Green Chillies chopped fine
    OR
    3-4 tsps.Red Chilli Powder
    4-5tsps.Coriander-Cumin powder
    Salt to taste
    5tbsps.chopped fresh Coriander(Cilantro)Leaves
    Preferred Oil for deep frying.
    PAKORAS
    200gms.Potatoes sliced horizontally to 0.25"thickness
    200gms.Shallots(Red Onions) sliced like the Potatoes 0.25" thick
    200gms.Egg Plant(Brinjal/Vaangey/Baingan)sliced to 0.25"thick slices
    400gms.Cauliflower(Flower/Gobhi) broken into florets
    2cups.Chick-Pea Flour(Besan)
    1.5tsp.Turmeric Powder
    3-4tsps.Red Chilli Powder
    2-3tsps,Coriander-Cumin Powder
    5tsps.Carom(Oavaa/Ajma/Ajwain)Seeds
    Salt to taste
    Prefferd Oil for Deep Frying
    STUFFED BHAJIYAS
    15-20 whole Large Green Chillies
    200gms.Potatoes boiled and mashed well
    1.5tsp.Turmeric Powder
    2-3tsps.Red Chilli Powder
    1.5tsps.Dry Mango Powder(Aamchur)
    OR
    1tbsp.Lemon Juice
    3tsps.Coriander--Cumin Powder
    Salt to taste
    1.5tsps.Carom(Oavaa/Ajma/Ajwain)Seeds
    5tsps.Chopped fresh Coriander(Cilantro) Leaves
    1cup Chick-Pea Flour
    Preferred Oil for deep frying.
    CHUTNEY 1
    1large bunch fresh Coriander(Cilantro)Leaves
    1bunch fresh Mint Leaves
    2-3 fresh Green Chillies
    1Shallot sliced
    1''Ginger Root chopped
    2tsps.Dried Pomogranate Seeds(Anardana)
    2tsps.Chaat Masala(Everest/MDH/Shaan brand)
    1tsp.Brown Cane Sugar
    Salt to taste
    CHUTNEY 2
    0.5cup Raw Coconut grated or shredded
    1large bunch fresh Coriander(Cilantro)Leaves
    1tsp.Cumin Seeds
    3-4 Green Chillies
    4-5 flakes of Garlic
    1tsp.Brown Cane Sugar
    Salt to taste.
    2-3tsps.Lemon Juice
