- 2 ounces dried porcini mushrooms (we used dried mixed mushrooms)
1 1/2 pounds fresh mushrooms (we used cremini)
3 tablespoons olive oil
1 cup chpped onion
1/2 teaspoons salt
3 ounces/85g uncured turkey bacon
1 tablespoon smoked paprika
1 cup dry white wine
2 cups chicken broth (broth is not included ingredient calculations because we use homemade no sodium veggie, chicken or turkey broth)
3 russet or Yukon Gold potatoes (1 1/2 lbs.) diced with skin on
Salt and freshly ground black pepper
8 ounces plain, non-fat Greek yogurt (or 1 oz. per serving)
