    6 chicken leg quarters, separated into leg & thigh, skin removed
    1/2 tsp kosher salt
    6 tbsp olive oil
    1 yellow onion, sliced
    1/2 cup dry white whine, such as Sauvignon Blanc
    4-inch strip orange zest
    1 tsp dried thyme leaves
    Generous pinch saffron threads
    1 can (14 1/2 oz) chopped tomatoes
    1 cup chicken broth
    2 cans (15 ounces each) garbanzo beans, drained and rinsed
    2 garlic cloves, minced
    3/4 tsp red pepper flakes
    1/2 cup chopped fresh mint leaves
    4 ounces crumbled feta cheese
    Freshly ground pepper
