Vegetable Stir-fry W/ Tofu

Ingredients

    canola oil, 2.5 TBS
    tofu, 1block cubed & drained
    onions, 1.5 cups, sliced
    salt to taste
    carrots, 1 c., sliced on the diagonal
    celery, 1c. sliced on the diagonal
    garlic, 4 cloves minced
    ginger 3-4 tsp, cut into very thin matchsticks
    broccoli florets, 1.5 c.
    green beans, 1c., ends trimmed
    red bell pepper, 1c., sliced into 1/4inch strips
    low sodium soy sauce or tamari 2/5 TBS
    vegetable broth, 1c. (low sodium would be better)

This Is Based On One Of Deborah Madison's Recipes. I Added The Red Pepper Flakes For More Flavor & Altered The Veggie, Adjusted The Garlic & Ginger Content To My Taste.
