Amazing Veggie Loaf

Ingredients

    1 – 2 tablespoons olive oil
    5 large mushrooms
    5 large leaves Kale, spinach or other dark greens
    1 roasted red pepper, drained
    1/4 cup sundried tomatoes, rehydrated in warm water
    1 carrot, cut into chunks
    1 cup cooked brown rice, packed
    ½ cup almonds
    ½ cup bread crumbs
    1/8 tsp chili powder
    1 tsp dried basil
    1 tsp dried oregano
    1/2 tsp cumin
    1/2 tsp curry powder
    1 tablespoon balsamic vinegar
    1 tbsp maple syrup
    2 tbsp soy sauce or tamari
    1 large egg, lightly beaten

    Maple Sauce (optional - quite sweet)
    1/3 cup real maple syrup
    ½ cup ketchup
    2 teaspoons mustard
    2 teaspoons curry powder
    ¼ teaspoon nutmeg

Finally A Vegan Meatloaf I Really Love! I'm Loving This As A Staple Food In My Diet. Very Light But Satisfying. I'm Trying To Cut Soy Out Of My Diet For Health Reasons. This Recipe Is Great Because It Provides A Nice Serving Of Protein, Without Soy.
