Ingredients

    For the dressing:
    1/2 c. canola oil
    1/4 c. rice vinegar
    3 T. soy sauce
    3 T. smooth peanut butter
    1 1/2 T. sesame oil
    1 T. fresh lime juice
    1 T. mustard
    1/2 T. honey
    1/2 t. minced fresh ginger
    1 clove garlic, minced

    For the salad:
    1 c. chow mein noodles
    1/2 head Napa cabbage, cored and shredded
    1 head romaine lettuce, shredded
    1 1/2 lbs cooked, shredded chicken breasts
    1/2 c. loosely packed cilantro leaves
    2 c mung bean sprouts
    10 snow peas, julienned
    4 scallions, thinly sliced
    1 red pepper, julienned
    1 carrot, julienned
    1 cucumber, julienned
    1 T. toasted sesame seeds
    roasted crushed peanuts, for garnish
