Fall's Favorite Curry

Ingredients

    1 cup non-dairy milk of choice, such as coconut milk, soymilk, etc. (I use almond milk)
    Imagine No-Chicken broth
    4 tablespoons tomato paste
    1/2 tablespoon good curry powder (make sure to use one you know that you like; once I bought a different brand, because they were out of my favorite, and it was horrible! I really like Kroger brand or SmartSpice)
    1/2 tsp minced garlic
    1 tsp salt, or to taste
    2/3 to 1 cup roasted sweet potato or winter squash, mashed (I use 2/3 cup butternut squash, but sweet potato would be just as delicious.)
    about 2/3 of a large onion, diced
    2-4 bell peppers, diced (I use four, because I’m a pepper fanatic)
    1 bag broccoli florets (about 340-425 grams. I always get the bigger bag, because I reeeeeaaally like broccoli!)
    1 small bag green beans
