    * 1 large red bell pepper, chopped (about 1 1/3 cups)
    * 2 tablespoons roasted peanut oil, divided
    * 1 teaspoon grated peeled fresh ginger
    * 3 garlic cloves, minced
    * 1 pgk lite firm tofu
    * 1/2 cup fat-free, less-sodium chicken broth (or vegetable broth)
    * 3 tablespoons low-sodium soy sauce
    * 1 teaspoon cornstarch
    * 1/4 cup sliced almonds, toasted
    * 1/4 cup chopped green onions
