Spray Olive Oil
1 1/2 cups white onion, chopped into small dice (1 medium onion)
3/4 cup carrots, chopped into small dice
3/4 cup celery, chopped into small dice
3 garlic cloves, whole medium-sized
2 stems of fresh thyme
1 1/2 teaspoons fresh oregano, finely chopped (substitute
1/2 teaspoon dried oregano)
1 1/2 teaspoons sea salt
1/8 teaspoon freshly ground black pepper
3 cups lentils, washed and sorted
4 cups unsalted chicken stock
4 cups water
2 large fresh bay leaves (substitute 4 large dry bay leaves)
1 Tablespoon lemon juice
2 cups escarole, cut julienne (into thin strips)
Additional salt and pepper for seasoning
Pecorino Romano cheese, garnish (not included in nutritional info)
