- 2 Tbsp olive oil
½ onion, chopped
2 stalks celery, chopped
1 bell pepper, any color, chopped
2 garlic cloves, minced
1 c frozen corn
1 Tbsp ground cumin
2 tsp chili powder
2 tsp oregano
2 c veggie broth
4 15 oz cans low-sodium cannellini beans, drained & rinsed
1 4 oz can chopped green chilis
¼ c (or to taste) salsa verde I used Trader Joses Salsa Verde
Salt/pepper to taste
Optional: 2 veggie sausages, cut in half lengthwise and diced I used Smart Sausage Italian style
Optional: chili toppings shredded cheese, avocado, sour cream, hot sauce, etc.
