Borcht With Meatballs

Ingredients

    1/4 cup fresh bread crumbs

    For Borscht:
    6 beets, well scrubbed
    3 tablespoons butter
    1 onion, diced
    2 carrots, diced
    1 leek, diced
    2 tablespoons red wine vinegar
    6 cups beef stock
    1 Idaho potato (about 8 ounces), peeled and diced
    1/2 head small cabbage (about 1 pound), diced
    2 bay leaves
    1/2 teaspoon chopped thyme
    1/2 cup sour cream, for garnish
    1 teaspoon minced parsley, for garnish
