Amy's Jumbalaya

Ingredients

    1 C. green peppers, coarsely chopped
    1 C. celery, coarsely chopped
    1 C. yellow onion, coarsely chopped
    2-3 garlic cloves, pressed
    1 can Italian-seasoned diced tomatoes, undrained
    1 lb (or less) sliced kielbasa sausage
    1 boneless, skinless chicken breast, cut into 1in. cubes
    1 C. uncooked long grain brown rice
    1/2 tsp. oregano
    1 tsp. hot paprika
    1/2 tsp dried thyme leaves
    1 tsp salt
    1/4-1/2 tsp red pepper flakes (ground red pepper)
    14.5 oz. chicken broth
    3/4 C. frozen peas
    3/4 C. frozen corn

    optional: 8 oz., uncooked, medium fresh shrimp, peeled and deveined (leave out half of the kielbasa when using the shrimp)
