    • 1 Tsp Baking Powder (gluten free)
    • 1/2 Tsp Baking Soda
    3/4 Cup Dark Brown Sugar
    • 1/2 Cup Desicated Coconut
    • 2 Tsp Cinnamon
    • 1/2 Tsp Ground Ginger
    • 1/2 Tsp Ground Corriander
    • 1/2 Cup Walnuts (chopped)
    • 1 Cup Mashed Banana *
    • 1/2 Cup olive oil
    • 1 Tsp Vanilla Extract
    • 2 Eggs
    • 420g Can Crushed Pineapple (drain well and reserve 2 Tbsp juice for icing)
    Icing
    220g low fat cream cheese
    1/2 cup Splenda granular
