    Stealing his oats! KERF Readers, meet Larry And Tanya!



    Roni took a cute self photo with Larry and I wanted one too, but I was too short to see over his shoulder



    The PepsiCo Sustainability Center is really cool and made of TONS of recycled materials. Our chairs are made from recycled Aquafina bottles! The insulation in the walls is recycled denim. And this info board is made from oats



    Here’s a sneak peak of Quakers new True Delight bars. I tasted a bite of the Toasted Coconut Banana Macadamia Nut - YUM! They have a pretty good nutrition label sans a few sugar alcohols. They’re hitting shelves soon.



    Lunch!
    Although I wasn’t terribly hungry from my earlier big bowl of oats, lunch was excellent. I made a salad with a bunch of fresh ingredients.



    Mixed greens, cuc, broccoli (perfectly steamed), tomato, chicken strips, tuna, cheese, oil + balsamic vinegar.



    And the orange in the fruit bowl was just calling my name!





    Lunch was calorically light, but I’ve got plenty of snacks if I need them later

    Stuffed With The Real Deal
    Did ya know? 346 million bowls of oatmeal are consumed every year!

    Mmmmmmmmmmmmmmm!!!!



    Backtracking to this AM….

    I was so excited about today (and I have that killer body clock) that I woke up at 5:45 this morning with my mind racing. I figured I’d make my way down to the gym and use the time wisely. I found MizFit and Roni already on the ellipticals! The gym was really nice for a hotel. I spent about 40 minutes on the elliptical watching TV. It was great to sweat and I chugged water too.

    I was cleansed inside and out this morning. First with my workout, and then with fabulous Aveda products in my fabulous bathroom! I sashayed around my hotel room in my robe looking at the city scape. So fun!



    While I was getting ready I made some hot water for tea in the coffee pot. I found a really good Earl Gray tea bag too.



    I didn’t think I could wait until 9:30 to eat so I snacked on some trail mix that I brought from home as well -



    Then we arrived at the Pepsi-Co Headquarters for the day to begin.



    And arrived to the Oatmealpalooza Bar!





    Today’s combo

    1/2 packet Pumpkin Spice oatmeal (on the bottom - it’s good! Available only at Wal-Mart for a limited time)
    Rolled oats
    Steel cut oats
    Splash soy milk
    Golden raisins
    A few walnuts
    A few blueberries
    Cinnamon
    Organic PB!!!!!!!!!!!!! Thanks to the event organizers for making my day!




    Plus coffee. I’m stuffed now!

    We started the day with a talk by a food scientist who reminded us that steel cut, old fashioned, and instant oats all have identical nutritional stats. All are great for you!

    The Coolest
    This is the coolest thing I have ever done!!! We are being treated like real celebrities here by Quaker - the Hard Rock Hotel is simply fabulous and we were greeted with a bag of goodies, including a FLIP video camcorder to record the weekend!!! OMG OMG!!!!!



    My flight was quite painful because this big man basically yelled in my ear the whole time, but I did get a little of my nutrition project done and am reading The Choice by Nicholas Sparks. I opened my book to find a romantic love poem that the husband snuck in it for me to read! We have always done a good job with sneaking little things into luggage when we’re apart. I teared up on the plane

    I got pretty hungry around 5:00 EST and had my first Chocolate Chip Z-bar . It was good, but not as good as the S’mores.



    Then I ran into JENNA !! Well, actually I had to take a train to get to her terminal, but it was still really fun to come into the city together. We took the lonnnnnnng train ride in and made it safely to the hotel.

    We met the other bloggers down at the bar for some delicious appetizers and drinks.

    I started with a few olives and lime cashews -



    Followed by a PUMPKIN Old Fashioned!!

    Cracker + smoked salmon/tuna tartar



    More pizza! (They were smallish slices)



    1/3 of this bitter local beer (Shared it with Jenna)



    Bloggers! SO COOL to meet them in person. I’ve been reading some of the blogs for a long time!



    Split a glass of Viognier with Jenna (I never "felt" the alcohol but started to feel dehydrated here)



    Then Jenna and I walked about 15 minutes in the Big City to meet about 15 or so of our blog readers!!

    I have to say for the third time: MY READERS ARE SO COOL!!! Seriously. In the comments you are words, but in person, you guys are so cool!! I can’t believe you all stop in to see what I’m up to each day



    A few of them brought me gifts!! Pumpkin bars, coconut butter (!), pumpkin bark, soup mixes, a cool tea. Thanks you guys!!

    At the bar I had a 2.5 oz glass of red (I knew anything more would put me in the danger zone of feeling bad in the AM, although Madison had the most delicious glass I’ve had in ages - the 2006 D&S blend. Mmmm!!! I had 2 sips of hers She let me pick out her wines for her, and now she’s going to go to more tastings and try more wines, right Madison!?)



    Tomorrow’s a full day of all-things-Quaker !! I can’t tell you in words how excited I am to crawl into this king sized bed and sleep. Only wish my husband was here to keep me warm!

    Flyin’ Fare
    Hello from the Bojangles’ eating area at Charlotte Douglas Airport!! Our airport is the coolest because we have FREE WI-FI and rocking chairs And lots of good eats - including the only Jamba Juice for hundreds of miles! I always try to get one when I travel. I planned today’s to be part of my lunch. I got a Strawberry Banana one. I like Jamba a lot, but it’s no Smoothie King!



    The rest: a smallish peanut butter + pumpkin butter sandwich and some carrots.



    And I’ve got this guy:

    You may be wondering how my smoothie fits into the Thanksgiving Challenge. Well, this is a business trip for me. KERF is a small business! And we were given some funds to get us to and from our homes for taxis, luggage fees, etc. There’s just enough to cover some airport food and a few weekend cocktails Since I did not choose this trip for leisure, I think it’s fair to put the meals I have out toward my “client.” But I did bring most of my lunch, and you can be sure the husband is following all the rules at home - he’s got his 5 lb bag of potatoes to play with this weekend and will be grocery shopping for the coming week as well.

    This morning’s organic test was somewhat of a disaster Seriously. I was quite upset when I left and luckily my prof told me there would probably be a curve. I hope it’s a big one. I was very prepared for this test, but it was just that. hard. Thanks so much for all of your nice comments and wishes this morning though!

    Gotta go do my Foodservice School Lunch Menu while I wait for my flight. Hopefully I can work a mile high as well.

    PS. The couple beside me is typing an email in Japanese (or at least I am pretty sure that’s what it is)! She’s logged into Yahoo but her keyboard is set to Japanese. So cool!

    FUEL
    I am running on adrenaline this morning for sure.

    Got up (easily) at 5 and went to the gym with my organic study sheets. Spent 45 minutes going over and over the reactions and mechanisms on the elliptical - I could still keep going, as I don’t completely know them all to be able to recognize + reproduce them. But time’s up!! I did 10 minutes of pull-ups and a few weight machines before I headed home - before schedule!

    Shower + PACKING + dressed + make-up/hair + made coffee + made part of lunch + made oatmeal + cleaned pot = enjoying oatmeal while catching up on emails.



    YUM bowl today!

    1/3 cup Windy Hills flax oats, 2% milk, water
    1/2 large banana, pinch salt
    1/4 cup wheatberries
    1/3 cup cottage cheese
    Walnut
    Spoonful Butter Toffee PB


    I added more cottage cheese than usual and some walnuts because this breakfast needs to get me through my test and to the airport. The extra cottage cheese kind of ruined the creamy consistency (it was more mucousy - sorry) so note to self that 1/8-1/4 cup is best for my liking.

    I also decided to make COFFEE by myself!! Yum!

    When I get home around 11:30 after class and then my test, I’ve got to turn right around and head to the airport. See you from inside!

    Can’t Talk - Chemistry!
    Ay yi yi!!! 7+ hours of organic chem and I’m still not ready yet. But I’m going to bed now and I’ll just have to do my best. This is definitely one of the hardest tests I’ve ever prepared for.

    I came home from class pretty hungry and made a nice sit-down snack: 1 small chopped apple, about 2/3 cup TJ’s greek, a few tbsp pom seeds and some almonds. The husband had a peanut butter bar from GH and fresh bread, but I did not eat them



    I also had some ketones and aldehydes -



    My friend Victoria came over to study with me around 5 and we just now finished. Lucky us, we had our own personal chemistry chef to make dinner!



    He made this Tomato Soup with Beans and Rosemary that actually turned out to be really, really good.



    Here are his modifications, which he nicely typed up for me

    1.5 medium carrots, diced
    1 celery stalk diced
    3 clove garlic
    2t oil,

    sautee above

    Then Add:
    28oz crushed tomatoes
    8oz mater paste
    15oz navy beans
    1C broth
    1t red pepper flakes
    .5t bay leaves
    S & P to taste



    TODO: Bring to boil, lower heat, simmer 30 mins, blend, homph
