Morning Glory Muffins

Ingredients

    2 1/2 c. self-rising flour
    1/2 c. Splenda brown sugar blend
    2 Tbsp. ground cinnamon
    2 c. shredded carrots
    2 medium Gala apples, shredded
    3/4 c. raisins
    1/3 c. chopped pecans
    1/4 c. flaked sweetened coconut
    1 (8 oz.) can crushed pineapple in juice, drained
    1/3 c. canola oil
    1/2 c. Musselman's Light applesauce
    2 tsp. vanilla extract
    3/4 c. Egg Beaters

    For Icing:
    1 c. powdered sugar
    2 tsp. grated lemon rind
    1/4 c. lemon juice
