Butternut Black Bean Chili

Ingredients

    2 Tbsp olive oil
    1 medium onion, diced
    2 cloves garlic, minced
    5 cups butternut squash cut in 1 inch dice
    1 14 oz can diced tomatoes
    2 25 oz cans black beans (5 cups)
    1 quart vegetable stock
    1 Tbsp cumin
    2 tsp paprika
    2 tsp dried oregano
    1/2 tsp cayenne pepper, or to taste
    2 to 3 Tbsp tomato paste
    salt to taste
    lime wedges
    1.2 c cilantro, leaves picked from stem
    whole milk yogurt (optional)

Description

This Is A Spicy Vegetarian Chili. You Can Use Any Winter Squash, But Butternut Holds Up The Best.
