Vegan Lentil Veggie Salad

Ingredients

    *French lentils, 1 cup dry
    brown rice (1 cup cooked),
    Hearts of Palm, 1 cup sliced
    *Bell Pepper - Red - 1 large chopped
    Cherry Tomatoes- 1/2 cup sliced in half
    Cucumber (peeled), 1 large seeded and chopped
    Broccoli, 2 cups chopped
    Parsley, 1 cup chopped
    Olive Oil, 3 tbsp
    Limes, 1 fruit juiced
    Dijon Mustard, 1 tbsp
    garlic, 1 clove minced
    *Balsamic Vinegar, 1 tbsp
    salt and pepper to taste
