Pork Stir-fry With Vegetables

Ingredients

    1 1/2 tablespoons vegetable oil
    1 garlic clove, smashed and peeled
    1 slice ginger about the size of a quarter, peeled
    2 1/2 to 3 ounces pork tenderloin, cut into 1/2-inch strips
    3 or 4 mushrooms, thick-sliced
    1 small rib celery, cut into 1/4-inch pieces
    About 1 cup assorted veggies (asparagus spears, scallions, zucchini slices)
    1 tablespoons dry sherry
    1/4 cup chicken broth or water
    1/2 cup snow peas
    Sauce:
    2 teaspoons soy sauce
    Pinch salt
    Pinch pepper
    1 teaspoon cornstarch
    1 tablespoon water
    Garnish:
    1/2 teaspoon toasted sesame oil
    Scattering of nuts (cashews, macadamia, pecans), optional
