Ingredients

    1 Tbsp olive oil
    3 cloves garlic, minced
    1 small-medium onion, chopped
    1 cup chopped fresh, ripe tomatoes
    1 Chipotle pepper in 1 Tbsp Adobo sauce, deseeded and chopped
    1-2 tsp cumin

    4 cups of vegetable broth or 4 cups of water with 2 tsp Better than Bouillon or 2 bouillon cubes dissolved
    2 Fifteen oz cans black beans, drained and rinsed
    1 1/2 cups cooked acorn, or other winter squash, cubed
    1 Tbsp lime juice
    cilantro garnish, optional
