Ingredients
- 1 jumbo egg
1 egg white
1/4 cup canned stewed tomatoes (Low sodium if available)
2 half inch slices of a fresh tomato
1 six inch CORN tortilla
1/2 cup non-fat refried beans
1/2 ounce finely shredded cheese (I prefer colby but you can use what you like)
Salt and pepper to taste
Pam (or other brand) non-stick cooking spray
Description
Hearty, High Protein Way To Start Your Day. I Strongly Recommend Using A Non-stick Skillet For This So You Can Use Less Oil/butter Etc. Remember The Cheese And Refried Beans Have A Lot Of Salt To Use Any Extra Sparingly.
